Grilled Pork Tenderloin with Coconut Milk

Okay, maybe a few more warm weather recipes.. although one can make this in the oven, under the broiler. The flavors are yummy with coconut milk, cilantro and lime! I served it with a summer salsa but go ahead and use whichever fruit is in season… I still see mangos and nectarines in the store…get them while they last!

  • One 1½ pound pork tenderloin, cleaned
  • ½ cup coconut milk
  • 1 cup fresh coconut, cut into pieces
  • ½ cup fresh cilantro, chopped
  • 1 inch fresh ginger, chopped
  • 2 garlic cloves, chopped
  • 1 jalapeno, deseeded and chopped
  • Juice of one lime
  • Zest of one lime
  • 2 teaspoons salt

Transfer all the ingredients to a blender and blend till a smooth sauce is formed. Place the tenderloin and the marinade in a zip lock and marinate for 2 to 3 hours.

Take out of the marinade and pat dry with some paper towels. Pour the marinade in a saucepan and bring to a boil and keep aside. Grill or cook the tenderloin till it reaches an internal temperature of 145. Let it rest for a good 15 minutes, covered with aluminum foil.

Nectarine and Mango Salsa

  • 1 nectarine, chopped
  • 1 mango, chopped
  • 1 pepper (any color), chopped
  • 1 jalapeno, minced
  • Juice of one lime
  • ½ cup cilantro, chopped
  • 1 to 2 teaspoon salt

Mix all the ingredients in a serving bowl. Check for seasonings and serve on top of the sliced tenderloin.

Cabbage Mango and Jalapeno Slaw

So, it is Meatless Monday today and I usually post an entree that you all can make at home and enjoy with your family and not miss the meat… today I am posting a slaw in preparation for tomorrow’s deconstructed shrimp enchiladas… although this slaw would be delicious with just about anything… or even on it’s own. I have paired yummy mango with cabbage and jalapeño… yum…!

  • 2 cups green cabbage, shredded
  • 1 large mango, sliced thin
  • ½ large red pepper, sliced thin
  • 1 jalapeno, deseeded and sliced thin

Dressing

  • Juice of a large lemon
  • 2 tablespoons extra virgin olive oil
  • 1 to 2 teaspoons honey
  • 1 teaspoon ground cumin
  • 1 to 2 teaspoons salt

Transfer the cabbage, mango, red pepper and jalapeno in a serving bowl. In a small airtight container, add the lemon juice, oil, honey, cumin and salt. Place the lid and shake vigorously. Taste for seasonings and adjust according to taste. Add the dressing to the slaw. Mix well and serve.

Mango Cardamom Cookies with a Mango Glaze

How about some cookies?

  • 1 stick unsalted butter, room temperature
  • 1 cup turbinado sugar
  • ½ cup mango puree
  • 1½ teaspoons lemon zest
  • 1 teaspoon vanilla extract
  • 10 cardamom pods, crushed and the green skin removed (equivalent to 1 teaspoon cardamom powder)
  • 1 egg
  • 2½ cups white whole-wheat flour
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup buttermilk

Preheat oven to 400 degree F.

In large mixing bowl, cream butter and sugar together in an electric mixer. Add the mango puree, lemon zest and egg; mix well. In a medium bowl, sift the flour, baking soda, baking powder and salt. Carefully fold in the dry ingredients and buttermilk into the wet mixture with a rubber spatula. Drop a small scoop full of dough onto 2 parchment-lined cookie sheets. Bake for about 15-18 minutes or till golden brown. Transfer to a wire rack to cool. Drizzle the mango glaze with a fork on the cookies.

Mango Glaze

  • 1 cup powdered sugar
  • 4 tablespoons mango puree

Whisk the powdered sugar with the mango puree until smooth. Drizzle on the cookies.

Avocado and Mango Guacamole

Avocado and Mango Guacamole This summer I have been making guacamole at least once a week.. usually it is more like two. It is quite simple to make and usually takes the usual suspects. Lots of lime juice and salt are the key to a delicious guacamole. Cilantro and green onions help as well and so does garlic.

I wanted to mix avocado and mango together. The texture of the two fruits is exactly the same but the flavors couldn’t be different. One has a rich, creamy taste and the mango is sweet and tangy. The two went amazingly together. The guacamole was delicious and perfect with a steak!

4th Of July Recipes: Thai Style Mango Salsa

Thai Style Mango Salsa1 It is time to talk about fourth of July recipes. I can’t believe it is that time already. It feels like yesterday when we were complaining about the cold and wet weather and couldn’t wait for summer to begin. Well here it is and it is time to plan a delicious yet easy meal for your family and loved ones.

I came upon a Thai theme for this holiday. I find it a lot easier  to come up with recipes if I have a central theme established. For this theme, mangoes came to mind. Usually for an appetizer, I like to do a salsa and chips. It is easy and delicious and not too filling. It also goes well with beer, wine and any other mixed drinks you may be serving.

I decided to make a Thai style salsa- what does that mean? Well,  you essentially add Thai ingredients including fish sauce, sweet chili sauce, cilantro, lemon juice and you have a Thai style mango salsa! I served it with rice chips I purchased from Trader Joes.

Mango and Rice Salad

Rice and Mango Salad I love, love this salad. I utilized our favorite fruit in the house-mangoes. I make everything with this delicious fruit- entrees, appetizers, salads and dessert, oh, and some delicious drinks as well. I needed to serve a side dish with the shrimp curry I posted yesterday. I wanted to make some kind of a starch and also vegetables. I decided to make a rice salad (never made one before) and use mangoes, red peppers, green onions, cilantro and mint. How can you go wrong with all those delicious ingredients??

I made a fabulous dressing consisting of rice vinegar, honey and olive oil. It is amazing to me how just the right ingredients can make such a big difference in a dish. The tangy dressing made the rice salad absolutely delicious and it went perfectly with the shrimp curry.  We ate the rice salad a few days even after the curry was finished. It tasted better the next day.

This salad will be perfect with any grilled entree like hamburgers, hot dogs or even steak.  This will be a staple in our house for the summer.

Mango Strawberry Smoothie

Mango Strawberry Shake It was super hot and I was hungry. It was mid-afternoon and a few hours away from dinner. I wanted to eat something healthy but couldn’t think of anything. Of course the usual choices were right in front of me- fruit, yogurt, GG crackers, cheese or some junk food. Actually I try not to keep any junk food at home so at such moments I am not tempted to eat something I will regret later.

I thought of the mangoes I had in the fridge and a huge pack of strawberries I had purchased that morning. I of course have non-fat Greek yogurt always.

I decided to make a smoothie with the yogurt, low-fat milk, some mango and of course the juicy strawberries. To sweeten the drink, I added some delicious honey. All the ingredients used are good for you- so you can’t go wrong with this delicious drink. I added some ice and whipped it up in two minutes in my trustee blender.

My daughter and I enjoyed a glass each. It was delicious- not too sweet but just enough to satisfy my sweet tooth. It had enough protein to fill me up.

It was a perfect snack that is tasty, healthy and easy to make. The mango strawberry smoothie is delicious!
