Orange Barbecue Chicken

It’s the beginning of fall but I thought I should post a recipe for grilled barbecue chicken. I like making my own barbecue sauce as the store bought ones have far too much sugar and honestly, it is a very quick sauce! Make this one, quick!

  • 1 to 2 pounds chicken tenders or breast

 

  • 1 teaspoon ground coriander
  • 1 teaspoon roasted ground cumin
  • 1 teaspoon salt

Mix the spices and rub all over the chicken and marinate in the fridge for 3 to 4 hours or over night.

Barbecue Sauce

  • Juice and zest of 1 orange
  • 2 teaspoons smoked paprika
  • 1 teaspoon Dijon mustard
  • 1 teaspoon cayenne pepper
  • ¼ cup ketchup
  • 2 teaspoons honey
  • 2 teaspoons red wine vinegar
  • 2 tablespoons olive oil
  • 1 to 2 teaspoons salt

Mix all the ingredients together and taste for seasonings and keep aside. Take the chicken out half an hour before grilling/cooking. Baste the chicken with the sauce before, during and after the cooking process. Cook till the chicken is done and serve with the sauce on the side.

 

Cranberry and Orange Trifle

So, Valentine’s Day is on Saturday. I though I would do a few desserts this week. I am not a huge Valentine’s Day celebrator.. but any I will take any excuse to make a great meal and an amazing dessert. So here is my favorite- a trifle.. well, why not??

Orange Curd (Recipe from Food and Wine)

  • 3 large eggs
  • 2 large egg yolks
  • ½ cup sugar
  • ¼ cup fresh orange juice
  • 2 teaspoons finely grated orange zest
  • 2 teaspoons finely grated lemon zest
  • 1 stick cold unsalted butter, cut into tablespoons

In a small heavy saucepan, whisk together the eggs and egg yolks. Whisk in the sugar, then whisk in the citrus juices and zests. Add the butter and whisk constantly over moderately low heat until the mixture thickens, about 8 minutes; do not let it boil. Immediately strain the curd into a bowl. Press plastic wrap directly on the surface of the curd and cut 6 small steam vents in the plastic. Refrigerate the curd overnight.

Cranberry Filling

  • 12 ounces bag of fresh cranberries
  • 1 cup orange juice
  • 2/3 cup sugar
  • 1 teaspoon vanilla extract

Transfer cranberries, orange juice and sugar to a saucepan. Bring to a boil and simmer for about 10 to 15 minutes or till the cranberries have burst open. Turn the heat off and add the extract. Mix well and refrigerate. Take a quarter cup of the cranberries out for garnish.

  • 1 packaged or homemade pound cake, cut in slices
  • 1 cup whipping cream
  • 1 cup mascarpone cheese
  • 3 tablespoons powdered sugar

Whip the cream, mascarpone cheese and sugar with an electric beater till the stiff peaks are formed while being careful not to over whip.

Assemble the trifle by starting with lining the bottom of the bowl with one part of the cake slices (divide the cake slices into three parts). Divide the cranberry filling into three parts and spread one part over the cake. Divide the orange curd into three parts and spread one part over the cranberry filling. Repeat twice more and top with the whipped cream. Garnish with the cranberries. Chill in the fridge, preferably overnight.

 

Baby Kale Orange Salad with Cranberry Dressing

This is a perfect salad to make for the holidays. I have been using baby kale more and more. I added delicious oranges, which are so reminiscent of winter. I also made a delicious dressing with dried cranberries. This recipe makes quite a bit of the dressing- which can be kept in the fridge and reused for other salads…

Cranberry Dressing

  • ½ cup dried sweetened cranberries
  • ½ cup orange juice
  • 2 tablespoons red wine vinegar
  • ½ teaspoon Dijon mustard
  • ¼ cup extra virgin olive oil
  • Salt
  • Pepper

Add the cranberries, red wine vinegar and orange juice into a small saucepan. Bring to a boil and lower heat to a simmer and cover for 10 minutes or till the cranberries are soft and reconstituted. Add to a blender and blend till smooth. Add the mustard, olive oil, salt and pepper. Blend again till the dressing is emulsified. Check for seasonings and refrigerate.

  • 4 cups baby kale
  • 4 to 5 navel oranges, segmented
  • ½ cup slivered almonds
  • Salt
  • Pepper

Add the baby kale, orange segments and almonds into a salad bowl. Add about 1/3 cup of the dressing and toss. Taste for seasonings and add salt and pepper as needed. Serve immediately.

Apple Crisp- Easy Fall Dessert

I am in the holiday/fall mood and all I want to do is cook with all the ingredients that remind me of cold weather. Apples is one of those ingredients that makes me think of  cosy evenings in my house with a cup of hot apple cider or eating a delicious hot apple crisp with some ice cream.

I made this last weekend for a dinner at a friend’s house. I used my favorite apples- honey crisp but any kind of apples can be used-whatever you like.

I used a very typical crisp topping including flour- I used my usual white whole wheat flour and oats. I paired it with walnuts and cinnamon- and butter, of course. You can’t really go wrong with any of these ingredients.

The apples are mixed with orange and lemon zests giving the filling a wonderful citrusy, fresh taste. Everyone enjoyed the dessert. I served it with pumpkin gelato- which I made a few days ago. It came out really well- if I do say so myself.

The whole combination was a very successful one. This is another great idea for Thanksgiving. I will post the gelato recipe soon.

  • 2 pounds variety of apples (about 4 – 5 medium), cut into 2 inch pieces
  • Zest and juice of one lemon
  • Zest and juice of one orange
  • 1/3 cup turbinado sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cloves

Mix all the ingredients in a medium sized baking dish. An 8 X 8 square or an oval shaped will be fine.

Topping

  • 1 cup white whole wheat flour
  • 1/3 cup turbinado sugar
  • 1/3 cup brown sugar
  • 6 tablespoons unsalted butter
  • 1 teaspoon cinnamon
  • 1 cup toasted and chopped walnuts
  • ½ cup toasted oats

Preheat oven to 350 degrees.

In the bowl of a mixer, add the flour, sugars, and butter. Using the paddle attachment, incorporate the butter into the dry ingredients until the mixture looks mealy or crumbly. Stir in the oats and nuts.
Distribute the topping over the apples. Bake for an hour, or until the topping is golden brown and fruit is bubbling. Cool slightly and serve warm.

Passion Fruit Sangria

I posted this a couple of years ago .. and it is perfect for Cinco de Mayo!!

Did I mention I was obsessed with Latin cuisine? Well, I guess it is easy to see if you browse through my recent recipes on the blog. Every time I try to come up with a new recipe or something different for dinner, the only thing that comes to mind are Latin flavors.

The other thing I am loving right now are passion fruits. This Brazilian native fruit is the best tasting fruit ever! It is by far the most flavorful thing I have ever tasted. I wait for them to show up at Whole Foods or Eden Gourmet. They are quite expensive but SO worth the taste.

I recently found delicious passion fruit juice without any high fructose corn syrup. It is the Goya variety and it amazing! My husband came up with this sangria recipe and it is absolutely delicious. It is a perfect summer drink to serve at a barbecue. Try it and it will be part of your repertoire…

  • 3 to 4 apricots, sliced thin
  • 1 large nectarine, sliced thin
  • 1 large lime, sliced thin

Place the sliced fruits into a large glass pitcher.

  • 1 bottle sauvignon blanc
  • 1 cup lemonade
  • 1 cup orange juice
  • 2 cups passion fruit juice

Add the wine, lemonade, orange and passion fruit juice in the pitcher.

Let the liquid sit in the pitcher in the fridge for a couple of hours before serving.

Arugula Fennel & Orange Salad

The orange theme continues. I served this delicious salad with the yummy stew from yesterday. I love cooking with a theme- it doesn’t have to be very complicated. It could either be the same cuisine or just one ingredient that ties the meal together.

As I am obsessed with oranges right now and decided to add them to both my main entree as well as this salad.

The other ingredient in this delicious salad is fennel. Full disclosure on this veggie- I am not a big fan. Well, I guess I wasn’t a big fan until I started giving it a chance and started picking it up every time I would go grocery shopping. I started using it raw in salads. I used my nifty mandolin and came up with super thin, crunchy slices of fennel. It complements oranges really well.

I finished the salad with arugula. Arugula is one of my favorite greens to eat. I love the subtle bitterness they provide.

I then made a very easy salad dressing that includes fresh orange juice, Dijon mustard and agave. Agave is my new favorite sweetness to use in everything. Try this salad- it is yummy!

  • 4 cups baby arugula
  • 2 navel oranges, segments out and the rest juiced
  • 1 large fennel bulb, cleaned and sliced thin

Add the arugula, orange segments and fennel slices in a salad bowl. Mix well and keep aside.

Salad Dressing

  • Juice of the two navel oranges (about ¼ cup)
  • 1 tablespoon white wine vinegar
  • 1 teaspoon Dijon mustard
  • 2 teaspoons agave
  • Salt
  • Pepper
  • 3 tablespoons extra virgin olive oil

Add the orange juice, vinegar, mustard, agave, salt and pepper. Slowly drizzle the olive oil into the mixture until emulsified. Check for seasonings and add to the salad. Toss and serve.

Apple & Kale Salad with Pancetta Dressing

I was watching the Cooking Channel and came across this recipe. Well, not exactly the same one but something similar. The original was made with pears and was served over lettuce greens. I decided to change it up a bit and use up some end of the summer nectarines instead. Since summer fruit is now gone, feel free to use apples or pears. Either way this salad is delicious!!

  • 4 cups baby kale
  • 2 tablespoons plus 2 tablespoons extra virgin olive oil
  • ¼ cup pancetta, chopped
  • 2 medium apples , sliced thin
  • 1 teaspoon honey
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 3 tablespoons balsamic vinegar
  • 3 tablespoons orange juice
  • 1-2 teaspoons honey
  • 1/3 cup slivered almonds, toasted
  • Salt
  • Pepper

Heat a medium frying pan with 1 tablespoon olive oil. Add the pancetta and cook on medium heat for 4 to 5 minutes. Take the pancetta out with a slotted spoon. Add one tablespoon olive oil, apple slices, honey and balsamic vinegar. Cook on medium heat while stirring gently for 4 to 5 minutes. Take the apple slices out with a slotted spoon. Add the mustard, vinegar, remaining olive oil, honey and almonds. Using a whisk, stir vigorously to emulsify the dressing. Add salt and pepper. Taste for seasonings.
Add the greens to a salad bowl. Add the nectarines, rendered pancetta and the warm dressing. Toss and serve.
