Orange Pumpkin Trifle

This is a delicious dessert to make for the holidays!

Orange Curd (Recipe from Food and Wine)

  • 3 large eggs
  • 2 large egg yolks
  • ½ cup sugar
  • ¼ cup fresh orange juice
  • 2 teaspoons finely grated orange zest
  • 2 teaspoons finely grated lemon zest
  • 1 stick cold unsalted butter, cut into tablespoons

In a small heavy saucepan, whisk together the eggs and egg yolks. Whisk in the sugar, then whisk in the citrus juices and zests. Add the butter and whisk constantly over moderately low heat until the mixture thickens, about 8 minutes; do not let it boil. Immediately strain the curd into a bowl. Press plastic wrap directly on the surface of the curd and cut 6 small steam vents in the plastic. Refrigerate the curd overnight.

Pumpkin Bread

  • 1¼ cup white whole wheat flour
  • 1 teaspoon baking soda
  • ½ teaspoon fine salt
  • ½ teaspoon powdered cinnamon
  • ½ teaspoon ground nutmeg
  • 1 cup turbinado sugar
  • 2 large eggs
  • ½ cup extra light olive oil
  • 1 cup canned pumpkin puree

Sift the flour, baking soda, cinnamon, nutmeg and salt into a medium bowl, set aside. Lightly brush a 9X5X3 inches loaf pan with butter. Preheat the oven to 350 degrees F.
In a standing mixer fitted with a paddle attachment, cream the oil and sugar until light and fluffy. Gradually add one egg at a time mixing in between. Add 1 cup pumpkin puree and mix for about 5 minutes. Remove the bowl from the mixer. With a rubber spatula, mix in the flour mixture until just incorporated. Fold the batter to the prepared pan. Bake for 55 minutes or until a toothpick inserted into the center of the bread comes out clean. Cool the bread in the pan for 5 minutes before taking it out. Cool completely before serving.
Slice the bread into ½ inch slices.

  • 1 cup whipping cream
  • 1 cup mascarpone cheese
  • 3 tablespoons powdered sugar

Whip the cream, mascarpone cheese and sugar with an electric beater till the stiff peaks are formed while being careful not to over whip.

  • Segments of 3 large navel oranges plus a few more for garnish
  • ½ cup fresh orange juice

Assemble the trifle by starting with lining the bottom of the bowl with one part of the cake slices (divide the cake slices into three parts). Drizzle the layer with some orange juice. Divide the orange curd into three parts and spread one part onto the cake. Divide the orange segments into three piles and add the first pile onto the curd. Repeat twice more and top with the whipped cream. Garnish with a few orange slices. Chill in the fridge, preferably overnight.

Cranberry Orange Sauce

Cranberry Orange Sauce It seems to be kind of an orange theme this Thanksgiving. This easy, easy cranberry sauce from scratch is delicious and very quick to make. For those of you who traditionally open a can, please make this as well!

  • 1 dry quart cranberries
  • ½ cup plus 2 tablespoons brown sugar
  • 3 cups orange juice
  • 1 tablespoon adobo sauce
  • 2 teaspoons smoked paprika
  • 1 teaspoon salt
  • 2 navel orange segments
  • ½ cup cilantro, chopped

Add the cranberries, sugar, orange juice, adobo sauce, smoke paprika and salt in a medium saucepan. Bring to a boil and simmer on medium heat for 10 to 15 minutes or till the berries begin to split open and the sauce thickens. Taste for seasonings and cool in the fridge. Add the orange segments and cilantro once the sauce is chilled. Serve with turkey.

Fennel Orange & Avocado Salad

Fennel and Avocado Salad I have been cooking with a lot of fennel recently. I was not a big fan of fennel until a few months ago. I am not sure what exactly happened but now I find myself buying a pack of fennel bulbs every time I am in Trader Joes.. and I am there very often.

I find myself eating it raw mainly in salads but it tastes delicious roasted with a bit of olive oil, salt and pepper. I used the roasted variety as a pizza topping or even on a salad- they were delicious.

This salad is a bit different as it does not have any lettuce greens. It has lots of sliced fennel, orange segments and creamy avocado. They all make an amazing combination- with the crunch fennel, juicy oranges and soft avocados.

I made a simple lime and orange dressing with a bit of roasted cumin seeds.

The salad was simply delicious… to make a meal of it, one can add some chicken, shrimp or chunks of delicious fish…

Sausage and Peppers Bake

Sausage and Peppers Bake1 Who doesn’t like sausage and peppers? I love the combination of the sweet orange peppers with the savory sausages. I always have them on hand- usually a couple of packs in my freezer. They are extremely handy and versatile. Breakfast, lunch and dinner – all three meals can be delicious with chicken sausages.

I wanted to make a one pot meal- my favorite thing to cook. They are easy, quick and delicious. In this case, I added tomatoes and potatoes with the sausage and peppers. I added garlic and fresh thyme with salt and pepper. It is very simple yet extremely flavorful.

I bought a pack of ‘ready to bake baguettes’ from Trader Joes and baked some with this delicious dinner. I made a delicious arugula salad with orange segments. I made a quick dressing with orange juice, sherry vinegar, honey and extra virgin olive oil.

I gave my daughter just the arugula (which she doesn’t like so much but will eat it since she knows there is no way out). I also gave her the sausage and peppers but left out the potatoes and tomatoes- she doesn’t care for them. She loves the freshly baked bread as do my husband and I.

It was a quick and delicious meal- my favorite kind to eat. The sausage and pepper bake was delicious.

  • 1 pack (4 or 5 links) chicken sausage, sliced at a bias (I used a spinach and garlic one)
  • 2 yellow skinned potatoes, cut into 2-inch squares
  • 2 cups grape tomatoes
  • 1 orange pepper, cut into 2-inch squares
  • 3 cloves garlic, smashed
  • 3-4 sprigs of fresh thyme
  • 1 sprig of fresh rosemary
  • 2 tablespoons extra light olive oil
  • 2 teaspoons salt
  • Pepper

Preheat the oven to 400 degrees F.

In a lined 9 X 13 baking sheet add the sausage, potatoes, tomatoes, pepper, garlic, thyme, rosemary, olive oil, salt and pepper. Mix well with hands and bake for 45 minutes or till the potatoes are browned and cooked. Serve with a baguette and a salad.
