Yellow Lentil Recipe: Moong Dal

   

Dry Moong Dal I grew up eating this lentil dish. My mom would make it when we had people over for a meal.

It is very different than the regular lentil dish we normally make in which the lentils are cooked in water and then drained just till they are soft to the touch but not mushy. Once the lentils are cooked to perfection- like al dente pasta, they are mixed with a mixture of cumin seeds, green chilies and garam masala. You can also add sliced yellow onions into the mixture- it makes it more substantial and adds a bit of sweetness to the mix.

This dish is very simple and quick to make. It is perfect for a weeknight meal or when entertaining. I had chicken and spinach already in the fridge. I served it hot with freshly made rotis.

Indian Style Sauteed Mushrooms and Peas

   

Mushrooms and Peas Indian Style I love mushrooms- I can eat them three times a day, seven days a week. My daughter is the same way- she especially loves mushrooms on her pizza. She is very particular about the kind of mushroom on the pizza, though- they can be canned ones. She wants the fresh ones- I don’t blame her.

Anyway, this is a great side dish to make with any entree with chicken, fish or pork.

It is very easy to make. I sauteed the mushrooms with onions, garlic and cumin seeds. Once the mushrooms are cooked down and all the water is evaporated, I added the peas. They add great color and a yummy sweetness to the dish.

We had it with some sauteed chicken sausages but this concoction will be delicious on top of pizza as well. Try this mushrooms and peas dish- you will love it…

Apple Orange Duffins

   

Apple Orange Duffins Here is another version of one of our favorite treats in our house. My daughter can’t get enough of these and asks me to make them all the time. Her favorite are the jelly filled ones but she will eat any kind I make.

For these particular ones, I decided to do a yummy filling in the middle with apples and oranges. It is amazing how well the two flavors complement each other. I zested and juiced a navel orange and used the zest for the actual batter and the juice for the filling. I cut up my favorite apples- pink lady into chunks and added some sugar, cinnamon and lemon zest. I let the mixture sit for a while for the flavors to marinate.

I then made the usual batter and added just a bit of the filling in the middle of each duffin. Of course I coated them with the yummy sugar mixture and they were a hit. My daughter loved them.

Haryali Keema (Ground Turkey) with Green Beans

   

Haryali Keema with Green Beans With all the abundant vegetables in the farmer’s market, it is hard not to pick up lots and lots of fresh produce with out thinking twice. I bought too many vegetables and didn’t know what I was going to do with them. I had not made keema in a while and already had some ground turkey in the fridge.

Keema is any kind of ground meat cooked with either potatoes or any other kind of vegetables.

I decided to use up my green beans, green onions, dill and cilantro by making a green sauce. I then used the sauce as the base for the keema. I cooked the ground turkey in it with cumin seeds. I then added the chopped green beans and cooked them till they were soft but not mushy. I made sure they retained their color.

As I was cooking, I realized I had a one pot meal in front of me- and how I love coming up with these beauties! I made fresh rotis and it was a perfectly balanced meal that the whole family enjoyed.

Israeli Couscous with Cranberries and Pecans

   

Couscous with Cranberries and Pecans This is yet another great side dish to serve with any kind of protein. It will go really well with burgers, hot dogs, steaks and fish.

I made it with some grilled chicken. I used the harvest grain blend from Trader Joes which includes a few different grains including Israeli couscous.

I kept it simple with dried cranberries and pecans.

I made a quick orange dressing with fresh orange juice, orange zest, white wine vinegar and extra virgin olive oil. I mixed the yummy dressing into the cooked couscous blend and I had a delicious and healthy side dish.

My daughter didn’t care for the cranberries and nuts- so I took them out for her and she ate the grains. I made a simple green salad on the side and we had a light and delicious meal.

Orcchiette Pasta with Cauliflower and Sausage

   

Pasta with Cauliflower and Sausage This is a different kind of dish I tried the other day. I don’t end up making pasta as often in the summer months. Most meals are grilled and quick to make. As I have mentioned many times before, my husband loves cauliflower in any form and cuisine. I usually end up making it with Indian flavors- but for this meal I decided to pair it with pasta and sausage. I read a recipe in a magazine where the cauliflower was served in an anchovy sauce- I love anchovies and use them anywhere I can.

So, for this dish, I cooked the sausages with the anchovies, garlic and thyme. Somehow I always think of thyme when I cook with cauliflower- the two work really well together. I roasted the cauliflower in the oven and added the florets to the sausage mixture once they were golden brown. I paired it all with some orcchiette pasta (they look like tiny little ears). I love buying different shaped pasta- it makes for an interesting meal.

To add great texture to the dish, I roasted some leftover bread cut into small pieces with a drizzle of olive oil. Once the croutons were golden brown and crispy, I added them on top.

The pasta was delicious- essentially a one pot meal since it had everything in there.

  • 1 head cauliflower, cut into small florets
  • 1 tablespoon extra virgin olive oil
  • Salt

Preheat oven to 400 degrees F.

Place the florets on to a lined cookie sheet and drizzle the olive oil and sprinkle the salt. Mix well and bake for 45 minutes or till the florets are golden brown and soft. Keep aside.

  • 3 to 4 slices of sour dough bread cut into ¼ inch pieces
  • 1 tablespoon extra virgin olive oil

Place the bread pieces on a small lined cookie sheet and drizzle the olive oil. Bake in the same oven for 10 to 15 minutes, or till the bread pieces are golden brown and crunchy. Keep aside.

  • 1 four pack chicken sausage, taken out of the casings and crumbled
  • 3 to 4 anchovy fillets
  • 2 tablespoons extra virgin olive oil
  • 3 garlic cloves, minced
  • 2 tablespoons fresh thyme
  • ½ pound orcchiette pasta, cooked al dente
  • ½ cup spare pasta water
  • ½ cup fresh ricotta cheese
  • Salt

In a large frying pan, add the olive oil and anchovy fillets. Cook on medium heat for a minute or two. Add the crumbled sausage and cook on high heat for 4 to 5 minutes. Add the garlic cloves and fresh thyme. Saute for a minute and add the cooked pasta and pasta water. Add the cauliflower and mix well. Next, add the ricotta cheese and mix well. Cook for another minute or two till the cheese is heated through. Add the salt and taste for seasonings. Serve each plate with a sprinkle of crispy croutons on top.

Three Bean Salad with Nectarines

   

Three Bean and Nectarin Salad Here is another summer dish that is super simple to make and delicious at the same time. I made this one for a barbecue we were invited to. I offered to make a bean salad and decided to add juicy nectarines to the mix.

Like mangoes, nectarines add a delicious sweet, tangy aspect to any dish.

I used garbanzo, kidney and black beans. I added green onions, cilantro and the nectarines- that is it. You can assemble this salad in advance and refrigerate it until you serve your meal. In fact it tastes better if you dress it in advance and let it sit for a while. The flavors marry each other and taste delicious.

Speaking of the dressing, I made an orange chipotle one for this salad. I juiced two large navel oranges, one lemon and paired them with a chipotle pepper, honey and olive oil. It resulted in a delicious, fresh tasting dressing. I mixed the salad with the dressing and kept in the fridge until we were ready to go for the get together.

The salad was served with some lamp burgers and corn. Everything was delicious, especially the salad. It was a perfect balance of spice, sweet and tangy- my favorite flavor combination!
