Spinach with Mustard Seeds

This is a delicious side dish to make with any kind of meal- especially an Indian meal. It is quick with not too many ingredients….

  • 1 tablespoon coconut oil
  • 1 teaspoon mustard seeds
  • 2 teaspoons white moong dal
  • 2 teaspoons channa dal
  • 5 to 7 curry leaves
  • 5 oz baby spinach
  • Salt
  • Juice of half lemon

Heat a saucepan with coconut oil. Add the mustard seeds, white moong dal and channa dal. Saute on medium heat for a 2 minutes, stirring constantly. Add the curry leaves and cook for another 30 seconds. Add the spinach and cook till wilted. Add the salt and lemon juice. Check for seasonings and serve warm.
