Udon Noodles with Sesame Pork

I love, love noodles.. here is another yummy recipe.

  • 1 pound ground pork
  • 1 tablespoon tamari
  • 4 garlic cloves, grated
  • 1 inch fresh ginger, grated
  • 1 tablespoon Shaoxing wine

Mix the pork, tamari, garlic, ginger and shaoxing wine and marinate for 2 to 3 hours. Keep aside.

Sauce

  • 2 tablespoons tamari
  • 1 tablespoon Shaoxing wine
  • 2 tablespoons oyster sauce
  • ¼ cup Asian sesame paste
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey

Mix all the ingredients and set aside.

  • 2 tablespoons peanut oil
  • 2 to 3 baby bok choy, chopped, whites and greens separated
  • ½ cauliflower head, chopped
  • 1 cup shiitake mushrooms, sliced
  • 1 teaspoon Szechuan peppercorns, ground
  • 1 pound Udon noodles, prepared according to package directions
  • 1 ½ cups chicken broth

Heat a wok with peanut oil and add the Szechuan peppercorns. Saute for 20 seconds on medium heat and add the ground pork. Cook on high heat stirring and breaking the meat apart with a wooden spoon. Saute for 5 to 6 minutes or till golden brown. Take the meat out and add some more peanut oil and add the mushrooms. Saute on high heat for 3 to 4 minutes. Add the bok choy whites and cauliflower and sauté for 4 to 5 minutes on medium heat. Add the meat, noodles, sauce and chicken broth. Bring to a boil and cover on a simmer to cook the cauliflower through. Check for seasonings and garnish with bok choy greens.

 

Greek Style Chicken and Cauliflower Stew with Bread Crumbs

  • 1 small cauliflower, broken into small florets
  • 2 tablespoons extra virgin olive oil
  • Sprinkle of salt
  • Preheat oven to high broil.

Transfer the cauliflower florets onto a lined cookie sheet. Drizzle with olive oil and sprinkle with salt. Broil on high for 5 to 10 minutes, turning the florets over after 5 minutes so they are golden brown all over. Keep aside.

  • 2 tablespoons extra virgin olive oil + more
  • 4 to 6 chicken thighs, boneless, skinless, cut in half
  • Salt
  • 1 medium yellow onion, chopped
  • 3 garlic cloves, minced
  • 2 tablespoons, parsley stems, chopped
  • 1 tablespoon, dill stems, chopped
  • 1 tablespoon red wine vinegar
  • 1 bottle tomato pasata (tomato puree)
  • ½ teaspoon cinnamon
  • ½ cup kalamata olives, pitted and sliced

Heat a heavy saucepan with the olive oil. Add the chicken pieces, sprinkle some salt and brown in two batches, turning once. Take the chicken out and add more olive oil if needed. Add the onion, garlic, parsley and dill stems. Saute on medium heat for 4 to 5 minutes. Add the red wine vinegar, tomato sauce and cinnamon. Let cook and come to a boil and simmer for 10 minutes. Add the chicken pieces and let simmer with lid on for 15 minutes. Take the lid off and add the olives cooked cauliflower. Simmer for another 5 to 7 minutes. Check for seasonings and serve with a garnish of breadcrumbs.

Bread Crumb Topping

  • ½ cup panko bread crumbs
  • 1 tablespoon extra virgin olive oil
  • 1 garlic clove, minced
  • 1/3 cup fresh dill, chopped
  • 1/3 cup fresh parsley, chopped
  • Zest of one lemon
  • ¼ cup pine nuts, chopped

Heat a small pan with the oil. Add the bread crumbs and garlic and sauté on medium low heat for 5 minutes. Turn heat off and transfer the bread crumbs to a medium bowl. Let cool. Add the dill, parsley, lemon zest and nuts to the bowl. Mix well and serve the stew with a sprinkling of the bread crumb mixture.

 

 

Pesto Crusted Cod with Roasted Cauliflower

Healthy and delicious… what more does one want??? Try this one…

  • 4 filets of cod or any other white fish
  • ½ cup homemade or store bought pesto
  • 1 cup breadcrumbs
  • Salt

Preheat oven to 400 degrees F.

Mix the pesto with the breadcrumbs, add a drizzle of extra virgin olive oil if necessary. Season the filets with salt and divide the pesto mixture into 4 parts. Top each filet with the pesto mixture and set aside.

Place on a lined baking sheet and bake in oven for about 10 minutes or till the pesto mixture is golden brown and the fish is cooked through. Baking time will vary according to the filet thickness. Take out and serve with roasted cauliflower and couscous.

Roasted Cauliflower with Tomatoes

  • 1 cauliflower head, cut into florets
  • 1 cup cherry tomaotes
  • 2 tablespoons extra virgin olive oil
  • Salt
  • Pepper

Preheat oven to 400 degree F.

Place the florets and tomatoes onto a lined baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Mix well and roast for about half an hour or till the cauliflower is golden brown. Serve with the fish.

Cauliflower and Potatoes with Mustard Seeds

Nothing like starting the week with delicious and healthy cauliflower. If you follow my recipes- you know I make a lot of this cruciferous veggie and this one is especially easy and yummy….

  • 2 tablespoons coconut oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 10 to 12 curry leaves, chopped
  • 1 medium onion, chopped
  • 1 inch fresh ginger, grated
  • 1 cup cilantro, stems cut up and chopped and separated from the leaves
  • 3 to 4 medium yellow potatoes, chopped into 1 inch dice
  • 1 cauliflower head, cut into small florets, about 1 inch
  • 1 teaspoon turmeric
  • 2 teaspoons coriander powder
  • 2 teaspoons salt
  • ½ teaspoon cayenne pepper

 

Heat a large saucepan with the coconut oil and add the mustard seeds, cumin seeds and curry leaves. Cook for 30 seconds on medium heat and add the onion, ginger and cilantro leaves. Saute for 3 to 4 minutes on medium heat. Add the potatoes and cook on medium heat, constantly stirring for 5 to 6 minutes or till golden brown. Add the cauliflower florets, turmeric, coriander powder, salt and cayenne pepper and sauté for another 5 to 6 minutes. Turn the heat down and cover for about 5 minutes or till the potatoes and cauliflower are cooked through. Turn heat down and check for seasonings. Garnish with cilantro leaves and serve.

Chicken and Cauliflower Stew

Great winter stew with yummy cauliflower… delicious weeknight meal…

  • 1 pound chicken thighs, cleaned and cut into bite sized pieces
  • Juice of one lemon
  • 2 teaspoons smoked paprika
  • 4 garlic cloves, peeled
  • 1 cup cilantro, chopped
  • 2 teaspoons salt

Add lemon juice, paprika, garlic, cilantro and salt in a blender. Blend till smooth. Take out and transfer to a medium bowl. Add the chicken pieces and mix well. Marinate for at least 2 to 3 hours.

  • 1 cauliflower head, cut into florets
  • Drizzle of olive oil
  • Salt

Preheat oven to 400 degrees F.

Place the cauliflower onto a lined cookie sheet. Drizzle with olive oil and sprinkle salt. Mix well and roast for 30 to 40 minutes till the florets are golden brown but not over done. Keep aside.

  • 2 tablespoons extra light olive oil
  • 1 medium yellow onion, chopped
  • 1 cup tomato sauce
  • Salt
  • ½ cup cilantro, chopped

Heat a medium saucepan and add the olive oil. Add the onion and sauté for 2 to 3 minutes on medium heat. Add the tomato sauce and sauté for another 2 to 3 minutes. Add the chicken and the marinade. Bring to a boil and simmer for 10 minutes. Add the cauliflower, bring to a boil and lower the heat and place the lid. Cook for another 10 to 15 minutes, till the chicken is cooked. Mix well and check for seasonings. Add salt and cilantro for garnish. Serve with a green salad.

Ground Pork with Cauliflower in Cilantro Sauce (Keema Gobi)

Ground Pork with Cauliflower in Cilantro Sauce

One of our favorites…

Cilantro Sauce

  • 1 cup cilantro, chopped
  • 4 green onions, chopped
  • 1 inch fresh ginger, chopped
  • 3 cloves garlic, chopped
  • ½ yellow onion, chopped

Blend the cilantro, green onions, ginger, garlic and onion in a blender till veggies form a smooth paste. Keep aside.

  • 2 tablespoons extra light olive oil
  • 2 teaspoons cumin seeds
  • 1 pound ground pork
  • 1 head of cauliflower, cut into florets
  • Salt
  • 2 teaspoons coriander powder
  • ½ teaspoon cayenne pepper
  • 1 teaspoon garam masala
  • 1 cup cilantro, chopped

Heat a heavy saucepan with the oil. Add the cumin seeds and sauté for 30 seconds. Add the ground meat and sauté on high heat. Separate the meat while stirring with a wooden spoon- for about 3 to 4 minutes. Add the cilantro paste and sauté for another 3 to 4 minutes on medium heat. Add the cauliflower, coriander powder, salt and cayenne pepper. Mix well and lower heat to simmer and cover. Cook for 20 minutes. Take the lid off and turn the heat up, stirring constantly, cook for another five minutes or till the excess moisture has cooked through. Check for seasonings and garnish with cilantro.

Roasted Cilantro Cauliflower

Cauliflower is my ‘go to’ vegetable… easy to make, delicious and quick… I made this as side dish.

  • 1 cauliflower head, cut into florets
  • 2 tablespoons extra  virgin olive oil
  • ½ cup cilantro, chopped
  • 3 garlic cloves, chopped
  • 2 teaspoon coarse salt

Preheat broiler to high.

Par boil the florets in boiling water for a 2 to 3 minutes. Drain the water and pat dry the florets and transfer to a lined cookie sheet.

Add the oil, cilantro, garlic and salt into a mortar and pestle. Grind till a smooth paste is formed- a processor can be used instead. Add the paste to the cauliflower, mix well and roast under the broiler till the florets are golden brown. Serve as a side dish.
